Sea urchins and seaweed.  The Minister of Fisheries Per Sandberg wants people to eat everything the sea has to offer. He challenges the private sector to adapt seafood for their lunch box,  everyday meals and  for evening treats .

– Everyone should eat more fish, more fish. You get more of what you’re supposed to have more of, and less of what you should have less of, Sandberg concluded in his introduction speech at the conference “The joy of the meal – healthy for all” in Stavanger on Tuesday.

He pointed out that Norwegians mostly eat cod and salmon, but that there are more fish – and plants – in the ocean:

– We need a variety of seafood products that brings many benefits, top quality, adapted to all the different palates. There is so much more we can do. Now we will give more people to opportunity to eat sea urchins and seaweed. We will eat just about anything. We should eat seafood two to three times a week, and use the fish as a topping. We need to adapt this to the lunch box, everyday meals and evening treats, the Minister said.
